Donna I just made these lemon curd custards, not sure if you like lemon but they were great and very easy to do. Anybody not on a low carb/low sugar diet could just put sugar in the place of splenda. Lemon Curd Custards (makes two servings) Lemon curd 1 egg 1 tablespoon splenda juice and jest of 1 lemon 25g butter Pull all ingredients into a bowl and place over a saucepan filled with hot water, place on heat and bring to a simmer, stirring all of the time until they start to thicken, once it starts to thicken remove from heat. Custard 2 egg yolks 1 tablespoon splenda ½ teaspoon vanilla extract 1 cup of cream splash of milk Place all ingredients in a saucepan and mix well, slowly heat (moderate heat) and continue to stir until it starts to thicken. Remove from heat To serve divide the lemon curd between two dishes, then put the custard on top. Place in a fridge until cool, once cook you can either top with cream or crème fraiche. |
