Glad Teddie's OK! Minestrone's easy: there are probably as many recipes out there for it as there are Italian grandmothers! (Not that I have one!) Basically, just chicken stock, navy beans, split peas, onions, garlic, celery, carrots, cabbage, tomatoes, ham, some small pastas (I use the little shells) and fresh grated parmesan cheese, although I prefer to use finely shredded mozzarella, and like to add a pinch of oregano also. Sticks to the ribs...one of my favorite soups.
