hi all.
an uneventful morning as i slept in again. trying to catch up on chores, not sure whether to join the cheery or grumpy, LOL. we'll see...just doing housework again! how does my OH make so many dishes when he is only home for a few hours? LOL..baffles me.
anyway, hope you all are well!

...... puff puff, I'm outta breath but just catching up!
been a helluva day, won't bore you with details but very little sleep after a night shift, lots of noise round here. Probs with radiators ... brrr! been a bit worried about Posh, ? anorexia, but tempting her with nice stuff and she's having lil bits a a time. Will watch her again tomoz and if still no appetite then down the vets on Monday. Any suggestions very welcome.

I do sympathise PP about Posh not eating - if it goes on for more than 2 days, I'd take her to the vets. Is she drinking at all? It's so anxious making, I know. The thing that usually works with Merlin is just straight poached chicken in a bit of water. I did try it myself and it's not all that bad, if a bit bland. Also a bit of plain yoghurt if she's not lactose intolerant. Just a little bit each day instead of that probiotic, which is horrible.

Sorry Posh isn't eating well. Try tempting her with strong smelling foods she likes, if you haven't already; read somewhere that strong smell = good to cats. Sardines? Cheese? A bit of ham? Even picky Leia will eat a bit of ham .....

My poulet basquaise is simpler than Delia's. I don't think the Catelans would recognice hers - though it sounds very lush!

OK

1 Chicken - whole, jointed or pieces. I think it's better as we had it in SW France, which is small joints or large bone-in pieces. However you do it, all the chick gets into the pot, so you get the flavour & 'goodness' from the carcasse.
2 shallots/1onion, peeled and chopped
1 clove garlic, peeled and chopped
1 and a half red and half a green pepper, deseeded and chopped
large tomato, skinned, quartered and deseeded
375ml chicken stock
125 ml dry white wine
75gm tomato paste
2 tsp paprika (smoked, plain or a mixture, to taste)
50ml olive oil
50gm pitted black olives
sprig or thyme/bay leaf/s&p if desired

Heat oven to 200C
Fry the chicken pieces in the olive oil and put them in the casserole
Gently cook shallots, garlic, peppers, to soften slightly. Add paprika, thyme, bay leaf, and wine and bubble down to half volume. Pour into casserole
Put tomato, tomato paste and chicken stock into the pan, bring to the boil and skim off any scum.
Pour into the casserole, add the olives, cover and cook in the oven for 45 minutes - 1 hour.

You can vary the smokiness by adjusting the paprika. Use plain or smoked, as you fancy. There is a particular local spice which is supposed to be the definitive, but I haven't been able to find it. I tend to add a few drops of Tabasco too - not to make it hot, just add a little kick.

I lke it with rice or new potatoes
