Try Melanzane Parmaggiano . . . essentially vegetable lasagne without meat or pasta . . . aubergines thinly sliced are used instead of the pasta sheets. Always a fave |

My son and daughter are both vegetarian and have been for several years. How about using quorn mince or 'chicken' then you could do a spag bol or chilli, etc. One of my kids favs is quorn 'chicken' with mushroom sauce and savoury rice, easy peasy too! There are loads of vege alternatives now, vege roast, if you do a roast dinner, quorn fillets or how about curry, lots of choice using veggies or pulses. Hope it goes well! |

Yola pinched my idea! - it's one of my most 'luxurious' veggie meals as it turns out to be very rich Risotto is a nice meal everyone enjoys but you have the last minute preparation issues. My last alternative is mushrooms in a rich sauce - stroganoff, or a rich tomato-based sauce. Use button mushrooms, whole, and the carnivores won't feel they're missing out as the mushies are remarkably meat-like. |
