Chicken stuffing?

Following on some comments in Smudgley's chicken thread, I wondered, what is your favorite roast chicken stuffing?

I'm an old fashioned bread stuffing person myself; have tried a nice wild rice and pine nut one also. Don't like sausage nor cornbread stuffing. You?

Mine is sauteed onion and celery, butter, pepper, parsley flakes and poultry seasoning,,,hate sage!!

Breadcrumbs, sausagemeat, finely sliced onion, an egg to bind it, lemon zest, thyme, salt 'n' pepper.

I loosen the skin on the breast of the chicken and put the stuffing between the skin and the flesh so the taste goes into the breastmeat. Yummy!
